Quince


Quince, that big oaf chubby, hard as a rock is a delicate ... He has no bleeding heart, no, but his thin skin breaks at the slightest touch and mark brown bruises. Yet it grows tall, elusive, difficult to pick its weight, its size ... and when he falls in maturity, it hurts to rot quickly in the grass a little high in the fall.



I love quince for its delicate and fragrant flower ... and to enjoy each year of this miracle, I planted a tree high in the upper garden. How can a flower so delicate, so refined, can she give birth to this monster? The branches bend under the weight of fruit, but branches are resisting and relieve themselves, pear pear after the first passage of bird ... suffered in a crash that startled the cat.


Year in, year out, I'm ten pounds of ice to use some of this crop. Now I only eat very little bread ... I offer jars ... who wants someone accepting the fruit - yet very expensive - apparently preparing too difficult and tiring. It is true that it is not easy to cut the quince into quarters and should be armed with a machete to successfully share. But then it's only happiness in the smell of sugary juice that cooks, the house smells of winter and celebrate!

m'ingénie I find recipes to use all my work, without too much work, which is not obvious! A Moroccan, with lamb, an Austrian, with pork: no success! But for dessert? A cinnamon, mashed, wedges, sherbet ...


Quinces quartered

Ingredients: Quince

1 person + 2 (neighborhoods are sometimes difficult to cut without breaking them)
1 vanilla bean, star anise 1

sugar, water, wine White

Cook water, sugar, wine with vanilla and anise, one to two minutes.
Cut quinces into quarters, as carefully as possible by removing essential parts fiber by dipping them quickly in the syrup to prevent oxidation in air.
Cook 10 minutes over medium heat
Remove anise
Cook another about 5 minutes (the meat should be tender but not falling apart)
Remove Filter
quarters of fruit juice, and cook at a rolling boil to make syrup pink ...
Cool fruit and syrup separately

Just before serving, prepare fruit on plates, drizzle with syrup (whipped with a fork if it has frozen the meantime). Garnish the plate with a spoonful of yogurt, cottage cheese beaten or cream with a spoonful of orange blossom syrup, or sugar, simply!


is a subtle flavor and tender flesh. I like the taste a bit tart yogurt with all this sweetness!
